German Apple Cake With Crumble Topping

Ingredients
  

For the cake batter:

  • 130 g Butter
  • ½ cup Sugar
  • 2 Eggs
  • 1 Sachet Vanilla sugar
  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 pinch of salt

For the apple filling:

  • 2 lb Apples, Weight BEFORE peeling and coring
  • 2 tsp lemon juice
  • 40 g sugar Optional
  • 1 teaspoon cinnamon

For the sprinkles:

  • 160 g Flour
  • 80 g Sugar
  • 80 g Butter
  • 1 Sachet Vanilla sugar
  • ½ tsp Cinnamon

Instructions
 

  • Grease a 26 cm springform pan and line the bottom of the pan with baking paper.

For the cake batter:

  • Knead all ingredients for the cake dough with the dough hook until a smooth dough is obtained.
  • Then wrap the dough in a piece of cling film and refrigerate for 30 minutes.
  • In the meantime, preheat the oven to 180 degrees top and bottom heat.

For the apple-filling:

  • Peel and core the apples. Then halve them and cut them into small pieces.
  • Sprinkle the apple pieces with lemon juice, add the cinnamon and mix everything well.

For the crumble dough:

  • Knead flour, sugar, butter, vanilla sugar and cinnamon in a bowl with your hands to form crumbles.

Assemble:

  • Roll out the cake dough in a circle on a floured work surface.
  • Then put the dough into the springform pan and make a rim about 4 cm high with your hands.
  • Tip: If you do not succeed, you can also press the dough completely into the springform pan with your hands. You can also roll out a part of the dough directly on the bottom of the springform pan and form a border with the rest of the dough.
  • Now spread the apple filling in the springform pan.
  • Finally spread the crumbles as a topping on the apple pie.
  • Now bake the apple pie for about 55 minutes on a medium rack.
  • Tip: If the crumbles get too dark, you can cover them with aluminum foil.
  • After the baking time, take the cake out and let it cool down before removing it from the springform pan.
